oatmeal raisin chocolate chip cookies

* adapted from a recipe I learned as a child

ingredients:

1 cup butter, room temperature (you can use lard if you want)
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups oatmeal
3/4 cup raisins
3/4 cup semi- or bitter-sweet chocolate chips

directions:
1. Preheat oven to 375 F.

2. Cream butter until light and fluffy. Add sugar and cream together. Add
egg and beat well with vanilla.

3. Combine flour, baking soda and salt. Add to creamed mixture and mix
together. Add oatmeal and mix well.

4. Fold in raisins and then fold in chocolate chips.

5. Drop by spoon onto parchment covered or lightly buttered baking sheet, flatten and bake for approximately 12 minutes.

notes:

· I love thick chewy cookies so I make my dough into slightly higher-than-wider dollops when I am putting them on the baking sheets - they flatten out a bit but they are nice and crunchy on the outside and oh-so-gorgeous-and-chewy on the inside.

· These cookies will last a few days, in a covered container...longer if you hide them from your loved ones!
