coffee marinated steak

ingredients:

3 cloves of garlic
1 shallot
1⁄4 cup balsamic vinegar
1⁄4 cup dry white wine
1/3 cup olive oil
1/8 cup strongly brewed coffee
1 sprig fresh rosemary
1/4 teaspoon dried thyme
1 bay leaf
1⁄2 tablespoon kosher salt
2 steaks, good cut ~ 3⁄4 pound/0.34 kg each

directions:
1. Roast garlic and shallot in 375 F oven, wrapped in foil and drizzled with olive oil, for about 35 minutes (you'll know when it's done it smells divine).

2. Squeeze garlic from skin (it will be very soft) and remove skin from shallot - put into glass bowl. Add all other ingredients except steak. Mix to combine and pour into a zip-lock bag. Add the steaks and marinate for 4 to 5 hours or longer in the refrigerator.

3. Grill to your taste (I prefer med-rare to rare) and enjoy.

notes:

· Sometimes a recipe with only three steps is not a terrible thing and it certainly doesn't mean you're taking the easy route out, either. This steak has so much depth of flavour and is absolutely incredible. It's best to make this near to the end of summer when you can relax on the deck with the BBQ going and enjoy a leisurely before-dinner-drink. Very relaxing - an important part of enjoying cooking.
