Changes, hints and thoughts for the future:

- S. is having his writing group over next week for a meeting and I told him I would bake something (they usually have their meetings at Starbuck's, so I thought feeding them would be nice), so this was my "trial run"...my "audition" for him, you could say

- this recipe was good as is; it could also have been made with just about any berry that bakes well..or mmmmm...maybe even rhubarb!

 

 

 

 

Blueberry Buckle

*From Anna Olson's recipe

Ingredients:
1/2 cup unsalted butter, at room temperature
1/2 cup sugar
1 egg
1 teaspoon vanilla
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 cups blueberries

Topping:
1/3 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
3 tablespoon unsalted butter

Instructions:
1. Preheat oven to 350† F.
2. Cream together butter and sugar until pale yellow and creamy. Add egg and vanilla and beat in.
3. Sift together flour, baking powder and salt. Add to butter-sugar mixture alternately with milk until incorporated.
4. Scrape batter into cake pan and spread evenly and sprinkle blueberries on top of batter.

Streusel Topping
1. In small bowl blend sugar, flour and cinnamon. Cut in butter with your fingers until crumbly and no large bits of butter are visible. Sprinkle on top of berries.
2. Bake for 45-50 minutes. Allow to cool before serving.
