Changes, hints and thoughts for the future:

- I had made the recipe not long ago as a Blueberry Buckle and changed it by using apples and adding in maple syrup...yum yum yum.

- this recipe could also have been made with just about any fruit that bakes well..or mmmmm...maybe even rhubarb (being that it is almost rhubarb season)!

 

 

 

Apple Buckle

* Adapted From Anna Olson's recipe

Ingredients:
1/2 cup unsalted butter, at room temperature
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 cups peeled and chopped baking apples
1/4 cup maple syrup
1 teaspoon cinnamon
1/2 cup candied pecans or pralines

Topping:
1/3 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
3 tablespoons unsalted butter

Instructions:
1. Preheat oven to 350† F.
2. Cream together butter and sugar until pale yellow and creamy. Add egg and vanilla and beat in.
3. Sift together flour, baking powder and salt. Add to butter-sugar mixture alternately with milk until incorporated.
4. Meanwhile, put maple syrup with apples in small saucepan over medium heat and simmer for ten minutes till softened slightly.
5. Add 1 cup of the cooked apples and 1/4 cup pecans and combine.
6. Scrape batter into cake pan and spread evenly and sprinkle remaining apples and pecans on top of batter.

Streusel Topping
1. In small bowl blend sugar, flour and cinnamon. Cut in butter with your fingers until crumbly and no large bits of butter are visible. Sprinkle on top of apples and pecans.
2. Bake for 45-50 minutes. Allow to cool before serving.
