May 2004 - Mini Me...or is it "Mini Them"...?
I have
been doing more and more research online in regards to wedding and
specailty cakes. I do still want to take some more classes and learn
more about cake decorating, but for now I think I'll continue to
practice and attempt to hone my skills. My family is supportive
and my brother, expecially so with the pictures he is always taking
of my desserts.
In
the so far unending quest to expand my cake endeavours and knowledge
I took a turn towards to mini-version of bundt cakes this week.
I had purchased a mini-bundt cake pan for myself for my birthday
last month and after it had sat, ensconsed and rather lonely in
my drawer of baking accessories and pans for a month, I decided
it was time for it to make it's debut.
It
certainly did not disappoint. I found an easy and quite delicious
recipe on Epicurious for
a Coconut Bundt Cake and instead of simply baking it in a regular
old bundt pan, as it called for, I invited my mini-bundt pan out
of hiding and let it show itself as well as its talents off.
Beautifully
molded, delcious and light, these individual, Miniature
Coconut Bundt Cakes were a hit, expecially with my father, who
is a huge coconut fan. He even sent me an email this morning with
the subject line "Coconut": "I just ate a half
white coconut upside down donut cup-cake, and a glass of milk. That
was better than a Tim Horton's coconut donut. I think I'll try half
a chocolate one." At this a huge smile broke across my
face and I was pleased...glad I had chosen coconut rather than my
original intention of chocolate.
Next
week? I think I have to make a real cake. With icing. And decorations.
I've gone into withdrawl...I had a dream about decorating a cake
last night...it's time.
