January 2004 - Can You Catch the Cacciatore?
My
latest endeavor into low-fat cooking had rather blah results. I
took a recipe that I pulled from a magazine a while ago and attempted
to adapt it to a lower-fat dish. I'm so sure why, but it was really
quite bland when it was done...odd, because I usually love chicken
no matter how it's cooked (as long as it's cooked!), and chicken
cacciatore is normally one great dinner. Maybe my taste buds
had taken a leave of absence or something that evening.
I served
it with a not-so-great side-dish of stir-fried savoy cabbage and
peppers...not bad but I think I cooked it a bit too long, waiting
for the chicken to finish cooking, so the cabbage was just a bit
wilted. The cabbage was a recipe I saw on Oliver's
Twist (Jamie Oliver) a while ago and tasted okay but limp cabbage
is neither attractive nor is it really very palatable, honestly.

was appreciative of the dinner; he even claimed that the chicken
tasted good...which is nice of him since I'm the one on the diet,
not him.
