January 2004 - Easy Peasy Apple Pastry
My
friend Anne asked for this recipe this afternoon, so I thought I'd
add it today...
I love
apple pie but my pastry is simply not up to snuff, especially when
compared with my mother's, who has been baking pies for over forty
years now (and can most likely make delicious pastry in her
sleep). So I thought puff pastry might be a good idea and I
had a recipe for Apple
Galette that I had found in a Martha Stewart cookbook that used
puff pastry as a base.
Since
we were having that party on Saturday I thought why not go for broke
and make the puff pastry myself? Yeah. Right. I found a few rather
intricate and complicated recipes for the pastry and almost gave
up when I came across Martha's recipe for Quick
Puff Pastry on her website. It was so simple that I doubt I'll
ever buy frozen puff pastry again (well, maybe I will...it does
take a great deal less time and elbow grease).
Using
the Apple Galette recipe as a "base" I made the pastry
and added the apples to the crust once it was rolled out and in
the pan. I sprinkled the apples with sugar and tiny pats of butter.
I baked it and let it cool, waiting to make the caramel topping.
I never made the caramel topping, actually; I ran out of time and
energy. I just sprinkled the pie with some confectioner's sugar
and served this Apple Pastry
with whipped cream. It was quite good -- really light, and thus
went well with the rich chocolate cake I had already made, also
for dessert.
