Last
night was comfort food night...and comfort Jenn night, I suppose.
S. went out and got Harvey's hamburgers to feed me when I was too
hungry to cook. Why so tired? Well, I had a bit of a breakdown yesterday
when I realised that Jasmine (our adorable kitty) had nibbled
through the power cord (revision: extremely expensive, no clones
available, Mac power cord) for my laptop, rendering my computer
useless. Why not use the battery?!?! someone screamed,
I think. Well...the battery had recently given up the ghost after
two years of use and it only lasts about ten minutes on full charge.
So I was a mess (S. did get me a new one...bless him) and
needed comfort food at dinner last night.
I figured
I couldn't pull that off two nights in a row and looked through
my recipe binder for something that I hadn't made before. When I
came across the recipe for Honey-Soy
Chicken that I had liberated from a lonely magazine in my doctor's
office a few months ago I think "Ah-ha!" escaped my lips.
But what to serve alongside?

to the rescue, as usual. I thought I'd give a cabbage side-dish
another chance and since the main course was an Asian-inspired chicken
dish, when I came across this recipe for an Asian
Noodle Salad I thought it would be a perfect combination (and
S. is a big fan of Asian food, so this seemed to be the ticket to
try to pay him back for being the heroic take-care-of-Jennifer-guy
yesterday).
I made
the salad first so it could go in the fridge until dinner. I did
make a few changes to the original recipe because I didn't have
enough green onions (honestly, who at this exact moment has
14 green onions nestled in their vegetable crisper?) and I
did have a 1/2 cup of sugar snap peas just begging to be used up.
Also, not being a bit fan of eggs in things other than egg-specific
foods I omitted the hard-boiled eggs from the recipe entirely.
We
ended up with a rather delicious Asian feast...with left-over noodle
salad for lunch on the weekend. Yummy, yummy, yummy, I've got love
in my tummy...Sing it with me!
